I'm Just Peachy...You?

It is another rainy day here in the Berkshires. I really wanted to stay in bed and read a good book or watch a movie this morning, but I kept hearing hubby in the back of my mind saying, "Great if you go peach picking, but let's not let the peaches get too ripe and go to waste before you do something with them." Ugh, I hate it that he knows me so well. The Queen of  'not following through'. I have gotten much better at it as I get older or maybe it's just that I always hear him telling me to finish what I start.

 I looked on-line as to how the best way to freeze peaches and came away with this.
 Cut an X on the bottom.

Pop into boiling water for 30 seconds. I left them in longer.

 Remove from water.

Peel and cut.

Squeeze lemon juice over them.

Add one cup sugar to 4 cups fruit.

Put them into freezer bags.

Voila!!!!

Now I think I'll go finish watching "A Date with Judy"........

  1. I've done that before. The peaches taste OK when you thaw them, but they're kind of brown and mushy. They'll work OK for cobbler, but not for pie. I made some peach jam this year and it turned out great- definitely better than freezing! Check out my blog for the recipe! :)
