Brunches and Bunches of Love and Friendship

A few weeks ago I invited my two best buddies over for brunch. Because I work at night, this is often the best time for me to entertain. It is not always easy to get up and cook after working late the night before, as I did in this case, but after hours of laughter it was all good.  One of my friends, Miss Welz, does not eat any red meat or dairy so this can be a challenge for breakfast. I ended up making scrambled eggs with goat cheese (hers was minus the cheese) served over a shredded potato pancake, piled high with fresh sauteed spinach and topped with really good smoked salmon.


We drank Mimosas out of Waterford crystal and then finished off with organic vanilla yogurt (soy yogurt for Miss Welz) topped with fresh fruit and granola I had made.
How about another Mimosa?

This is a photo of hubby's mother taken in the late 50's. She was probably only in her teens here. 
Look at that dress! It is a light pink with layer upon layer of ruffle! She was only 4'9" tall and always looked like a doll. She had 5 children in 6 years (and was not even Catholic) and was an amazing women.
Remember "the mother cookbook", was hers. Hubby tells me that EVERY night...I said EVERY night, there was dessert. She cooked from scratch and lovingly brought up 5 amazing humans. Sadly she passed away from cancer when she was only 42 years old . I don't think a day has gone by in 30 years that hubby has not thought of and missed her.
